One grill, fourteen years, and a stubborn idea about how food should taste.
Six tables and a borrowed grill
In 2012 Layla Haddad signed a lease on a narrow room off Tahlia Street with enough space for six tables. The kitchen was a single grill, a two-burner stove, and a fridge that had to be kicked to stay closed. The menu ran to eleven items and changed whenever the market did.
Word travelled the way it does in a city that loves to eat. Within two years the waiting list ran a fortnight deep and the room next door came up for lease. We took it, knocked through the wall, and kept the original grill exactly where it stood.
Today Zaytoun seats ninety and delivers across half the city, but the working rule has not moved: buy well, cook to order, and never send out a plate you would not happily eat standing up at the pass.
What we are for
To make food worth leaving the house for — cooked properly, priced fairly, and served by people who are glad you came.
Where we are going
To become the restaurant Riyadh recommends first, without ever growing past the point where the kitchen can still taste every sauce.
Four things we do not negotiate
Sourcing before technique
No amount of skill rescues a tired ingredient. We start by buying better.
Respect for the guest
Allergies taken seriously, tables never rushed, and the same welcome at 11pm as at 7.
A kitchen worth working in
Fair rotas, paid training, and a hard rule against shouting. Good food comes from steady rooms.
Less waste, quietly
Whole-animal butchery, trim into stock, and a compost run that has kept nine tonnes out of landfill.
Meet the chef
Layla trained in Beirut and cooked across Lyon and Barcelona for nine years before coming home to open Zaytoun. Her cooking sits where the Levant meets the western Mediterranean — charcoal, citrus, olive oil, and a lot of restraint. She still works the pass four nights a week.
If it needs three sauces to be interesting, it was the wrong ingredient.

The first room
Six tables, eleven dishes, one grill. Opened on a Tuesday to four guests.
Twice the size
Took the unit next door and doubled the dining room without touching the kitchen’s rules.
Our own farm plot
Three hectares in Qassim now grow the herbs, tomatoes and cucumbers we use most.
Delivery, done properly
Launched our own fleet rather than outsource it, with packaging designed around the food.
Ninety seats, same grill
Still cooking on the original grill, still writing the menu around the week’s deliveries.
